Banh It La Gai
Banh It La Gai is a traditional Vietnamese dessert made with sticky rice flour, mung bean filling, and wrapped in screwpine leaves.
Ingredients - Serves 6
- Salt - 1/4 teaspoon
- Water - 1 cup
- Screwpine leaves - 12 leaves
- Coconut milk - 1/2 cup
- Sugar - 1/2 cup
- Mung beans - 1 cup, soaked and cooked
- Sticky rice flour - 2 cups
Let's Get Started
- In a mixing bowl, combine the sticky rice flour, sugar, coconut milk, water, and salt. Mix well until a smooth batter forms.
- Divide the batter into small portions and flatten each portion into a disc shape.
- Take a screwpine leaf and place a mung bean filling in the center. Wrap the leaf around the filling, forming a small dumpling.
- Repeat the process until all the batter and filling are used.
- Steam the dumplings for about 30 minutes, or until the sticky rice is cooked and the filling is soft.
- Remove from the steamer and let cool before serving.
