  1. Preheat the oven to 375°F and line a tart tin with the shortcrust pastry, trimming any excess.
  2. Spread the raspberry jam evenly over the base of the pastry.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the almond extract.
  5. Fold in the ground almonds, then spread this mixture over the jam.
  6. Sprinkle the flaked almonds over the top.
  7. Bake for 40-45 minutes, or until golden and set.
  8. Allow to cool before serving.
