Bakewell Tart

- Flaked almonds - 1/4 cup
- Ground almonds - 1 cup
- Almond extract - 1 teaspoon
- Eggs - 2
- Sugar - 1/2 cup
- Butter - 1/2 cup, softened
- Raspberry jam - 4 tablespoons
- Shortcrust pastry - 1 sheet

- Preheat the oven to 375°F and line a tart tin with the shortcrust pastry, trimming any excess.
- Spread the raspberry jam evenly over the base of the pastry.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the almond extract.
- Fold in the ground almonds, then spread this mixture over the jam.
- Sprinkle the flaked almonds over the top.
- Bake for 40-45 minutes, or until golden and set.
- Allow to cool before serving.
