Bacon and Onion Hushpuppies

- Vegetable oil - For frying
- Buttermilk - 1/2 cup
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Flour - 1/2 cup
- Cornmeal - 1 cup
- Onion - 1 medium, finely chopped
- Bacon - 4 slices, chopped

- Cook the bacon in a skillet over medium heat until crispy. Remove the bacon and set aside, leaving the grease in the skillet.
- Add the onion to the skillet and cook until soft and translucent.
- In a large bowl, combine the cornmeal, flour, baking powder, and salt.
- In another bowl, combine the egg, buttermilk, cooked bacon, and onion. Add this mixture to the dry ingredients and stir until just combined.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes.
- Remove the hushpuppies with a slotted spoon and drain on paper towels.
