Bacon, Onion, and Cheddar Cornbread

- Eggs - 2
- Milk - 1 cup
- Salt - 1/2 teaspoon
- Baking powder - 4 teaspoons
- Sugar - 1/4 cup
- All-purpose flour - 1 cup
- Cornmeal - 1 cup
- Cheddar cheese - 1 cup, shredded
- Onion - 1 large, finely chopped
- Bacon - 6 slices
Let's Get Started
- Preheat the oven to 400°F and grease a 9-inch round baking pan.
- Cook the bacon in a skillet over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the skillet.
- Add the onion to the skillet and cook until caramelized, about 10 minutes. Remove from heat.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk and eggs. Stir in the cooked bacon, caramelized onions, and shredded cheese.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into the prepared baking pan.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
