  1. Preheat your grill or grill pan over medium heat.
  2. Brush the chorizo sausages with olive oil and place them on the grill.
  3. Cook the sausages for about 6-7 minutes on each side, until they are fully cooked and have a nice char.
  4. While the sausages are cooking, cut the bread rolls in half and toast them on the grill for a minute or two, until they are lightly toasted.
  5. Once the sausages are done, place each one in a toasted bread roll.
  6. Generously drizzle the chimichurri sauce over the sausages.
  7. Serve the choripan immediately, with extra chimichurri sauce on the side for dipping.
