Apricot Crisp Quesadillas

Let's Get Started

  1. Preheat a skillet or griddle over medium heat.
  2. Spread apricot jam evenly on two of the flour tortillas.
  3. In a small bowl, mix together melted butter, oats, brown sugar, cinnamon, and vanilla extract to make the crumble topping.
  4. Sprinkle the crumble topping over the apricot jam on the tortillas.
  5. Place the remaining two tortillas on top to create quesadillas.
  6. Cook the quesadillas on the preheated skillet or griddle for 2-3 minutes on each side, or until golden brown and crispy.
  7. Remove from heat and let cool slightly.
  8. Cut the quesadillas into wedges and dust with powdered sugar before serving.
