Apricot Crisp Quesadillas
These sweet and crispy quesadillas are filled with apricot jam and topped with a crunchy oat crumble.

- Powdered sugar - For dusting
- Vanilla extract - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Brown sugar - 2 tablespoons
- Oats - 1/4 cup
- Butter - 2 tablespoons, melted
- Apricot jam - 1/2 cup
- Flour tortillas - 4
Let's Get Started
- Preheat a skillet or griddle over medium heat.
- Spread apricot jam evenly on two of the flour tortillas.
- In a small bowl, mix together melted butter, oats, brown sugar, cinnamon, and vanilla extract to make the crumble topping.
- Sprinkle the crumble topping over the apricot jam on the tortillas.
