Apricot Crisp Fried Rice

Ingredients - Serves 4

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add garlic and ginger, and sauté for 1 minute until fragrant.
  3. Add carrots and peas, and cook for 2-3 minutes until slightly tender.
  4. Push the vegetables to one side of the skillet and pour beaten eggs into the other side.
  5. Scramble the eggs until cooked through, then mix with the vegetables.
  6. Add cooked rice, diced apricots, green onions, soy sauce, and sesame oil to the skillet.
  7. Stir-fry for 5-7 minutes until the rice is heated through and slightly crispy.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!
