Apricot Cobbler Trifle
This delightful apricot cobbler trifle combines the flavors of juicy apricots, buttery cobbler, and creamy whipped cream.
Ingredients - Serves 8
- Crushed graham crackers - 1/2 cup
- Vanilla extract - 1 teaspoon
- Whipped cream - 1 cup
- Milk - 1/2 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Sugar - 1/2 cup
- All-purpose flour - 1 cup
- Lemon juice - 1 tablespoon
- Sugar - 1/2 cup
- Apricots - 4 cups, pitted and sliced
Let's Get Started
- Preheat the oven to 375°F.
- In a saucepan, combine the sliced apricots, sugar, and lemon juice. Cook over medium heat until the apricots are soft and the sugar has dissolved, about 10 minutes. Remove from heat and let cool.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add the milk to the flour mixture and stir until just combined. Do not overmix.
- Transfer the apricot mixture to a baking dish and spoon the cobbler batter over the top, spreading it evenly.
- Bake for 30-35 minutes, or until the cobbler topping is golden brown and cooked through.
- Remove from the oven and let cool for 10 minutes.
- In a separate bowl, whip the cream with vanilla extract until stiff peaks form.
- To assemble the trifle, crumble half of the cobbler into the bottom of a trifle dish or individual serving glasses.
- Layer half of the whipped cream on top of the cobbler.
- Add a layer of the remaining apricot mixture.
- Crumble the remaining cobbler on top of the apricot layer.
- Finish with a final layer of whipped cream and sprinkle crushed graham crackers on top for added texture.
- Chill in the refrigerator for at least 1 hour before serving.
- Serve chilled and enjoy!
