  1. In a large pot, combine the pork, beef, and chicken. Cover with water and bring to a boil. Reduce heat and simmer for 1 hour.
  2. Add the malanga, yucca, sweet potato, and corn to the pot. Continue to simmer for another hour.
  3. In a separate pan, sauté the onion and garlic until soft and fragrant. Add this to the pot.
  4. Stir in the chopped cilantro and lime juice. Season with salt and pepper to taste.
  5. Serve the Ajiaco Cubano hot, garnished with extra cilantro if desired.
