Ajiaco Cubano
Ajiaco Cubano is a hearty Cuban stew made with a variety of root vegetables, corn, and different types of meat.
Ingredients - Serves 6
- Salt and pepper - To taste
- Lime - 1, juiced
- Cilantro - 1 bunch, chopped
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Corn - 2 ears, cut into chunks
- Sweet potato - 1, peeled and cubed
- Yucca - 1, peeled and cubed
- Malanga - 1, peeled and cubed
- Chicken - 1 pound, cubed
- Beef - 1 pound, cubed
- Pork - 1 pound, cubed
Let's Get Started
- In a large pot, combine the pork, beef, and chicken. Cover with water and bring to a boil. Reduce heat and simmer for 1 hour.
- Add the malanga, yucca, sweet potato, and corn to the pot. Continue to simmer for another hour.
- In a separate pan, sauté the onion and garlic until soft and fragrant. Add this to the pot.
- Stir in the chopped cilantro and lime juice. Season with salt and pepper to taste.
- Serve the Ajiaco Cubano hot, garnished with extra cilantro if desired.
