  1. Soak the aiyu seeds in water for 2 hours.
  2. After soaking, rub the seeds with your hands until they become slimy and the water turns milky. This is your aiyu jelly.
  3. Strain the mixture through a cheesecloth or fine mesh strainer to remove the seeds. The remaining jelly should be clear and slimy.
  4. Refrigerate the jelly for at least 2 hours, or until it sets.
  5. To serve, cut the jelly into cubes and divide among serving bowls.
  6. Drizzle with honey and lemon juice, and top with ice cubes. Serve chilled.
