Aiyu Jelly Dessert
Aiyu Jelly is a refreshing, sweet dessert popular in Taiwan. It's made from the seeds of a variety of fig and is often served with honey and lemon juice.
Ingredients - Serves 4
- Ice cubes - 1 cup
- Lemon juice - 2 tablespoons
- Honey - 1/4 cup
- Water - 4 cups
- Aiyu seeds - 1/2 cup
Let's Get Started
- Soak the aiyu seeds in water for 2 hours.
- After soaking, rub the seeds with your hands until they become slimy and the water turns milky. This is your aiyu jelly.
- Strain the mixture through a cheesecloth or fine mesh strainer to remove the seeds. The remaining jelly should be clear and slimy.
- Refrigerate the jelly for at least 2 hours, or until it sets.
- To serve, cut the jelly into cubes and divide among serving bowls.
- Drizzle with honey and lemon juice, and top with ice cubes. Serve chilled.
