Air Fryer Fried Rice

- Salt and pepper - To taste
- Green onions - 2, chopped
- Eggs - 2, beaten
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Peas - 1/2 cup
- Carrots - 1/2 cup, diced
- Onion - 1, diced
- Vegetable oil - 2 tablespoons
- Cooked rice - 2 cups, chilled
Let's Get Started
- Preheat the air fryer to 400°F (200°C).
- Heat vegetable oil in a large skillet over medium heat.
- Add diced onion, carrots, peas, minced garlic, and grated ginger. Cook until vegetables are tender, about 5 minutes.
- Add chilled cooked rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps.
- Drizzle soy sauce and sesame oil over the rice. Stir to combine and cook for an additional 2 minutes.
- Push the rice mixture to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until cooked through.
- Combine the scrambled eggs with the rice mixture. Season with salt and pepper to taste.
- Transfer the fried rice to the air fryer basket and spread it out evenly.
- Air fry for 8-10 minutes, shaking the basket halfway through, until the rice is crispy and golden brown.
- Garnish with chopped green onions and serve hot.
