  1. Preheat the air fryer to 400°F (200°C).
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add diced onion, carrots, peas, minced garlic, and grated ginger. Cook until vegetables are tender, about 5 minutes.
  4. Add chilled cooked rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps.
  5. Drizzle soy sauce and sesame oil over the rice. Stir to combine and cook for an additional 2 minutes.
  6. Push the rice mixture to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until cooked through.
  7. Combine the scrambled eggs with the rice mixture. Season with salt and pepper to taste.
  8. Transfer the fried rice to the air fryer basket and spread it out evenly.
  9. Air fry for 8-10 minutes, shaking the basket halfway through, until the rice is crispy and golden brown.
  10. Garnish with chopped green onions and serve hot.
