Aab E Khiar
Aab-e Khiar is a refreshing Persian cucumber and yogurt soup, perfect for hot summer days.
Ingredients - Serves 4
- Walnuts - 1/4 cup, chopped
- Raisins - 1/4 cup
- Ice cubes - 1 cup
- Water - 1 cup
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Fresh mint - 1/2 cup, chopped
- Fresh dill - 1/2 cup, chopped
- Cucumbers - 2, diced
- Yogurt - 2 cups
Let's Get Started
- In a large bowl, combine the yogurt, cucumbers, dill, mint, garlic, salt, and pepper.
- Stir in the water and ice cubes until well combined.
- Chill in the refrigerator for at least 2 hours before serving.
- Just before serving, stir in the raisins and walnuts.
