Zuppa di Cozze, or Mussels Soup, is a popular Italian seafood dish. This recipe features mussels cooked in a flavorful tomato broth.

Ingredients

  • Salt and pepper - To taste
  • Parsley - 1/4 cup, chopped
  • White wine - 1 cup
  • Tomatoes - 2 cups, chopped
  • Onion - 1 large, chopped
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Mussels - 2 pounds, cleaned and debearded

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the garlic and onion and cook until the onion is translucent, about 5 minutes.
  3. Add the tomatoes, wine, parsley, salt, and pepper. Bring to a simmer.
  4. Add the mussels to the pot. Cover and cook until the mussels have opened, about 10 minutes.
  5. Discard any mussels that have not opened.
  6. Ladle the soup into bowls and serve with crusty bread.
