Zarzuela de Mariscos

Zarzuela de Mariscos is a traditional Spanish seafood stew, brimming with shrimp, mussels, and fish in a flavorful tomato broth.

Ingredients

  • Parsley - For garnish
  • Salt and pepper - To taste
  • White fish fillets - 1 pound
  • Mussels - 1 pound, cleaned and debearded
  • Shrimp - 1 pound, peeled and deveined
  • Saffron threads - A pinch
  • Fish stock - 2 cups
  • White wine - 1 cup
  • Red bell pepper - 1, chopped
  • Tomatoes - 2, peeled and chopped
  • Garlic - 4 cloves, minced
  • Onion - 1, finely chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the tomatoes and red bell pepper and cook for another 5 minutes.
  4. Pour in the white wine and fish stock, then add the saffron. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  5. Add the shrimp, mussels, and fish to the pot. Cover and cook for 10 minutes, or until the seafood is cooked through.
  6. Season with salt and pepper to taste.
  7. Serve the Zarzuela de Mariscos hot, garnished with parsley.
