A simple and flavorful pasta dish featuring linguine tossed in homemade pesto and topped with fresh cherry tomatoes.

Ingredients

  • Salt and pepper - To taste
  • Cherry tomatoes - 1 cup, halved
  • Olive oil - 1/2 cup
  • Parmesan cheese - 1/2 cup, grated
  • Pine nuts - 1/4 cup
  • Garlic - 2 cloves
  • Basil leaves - 2 cups
  • Linguine - 1 pound

Instructions

  1. Cook the linguine according to the package instructions until al dente. Drain and set aside.
  2. In a food processor, combine the basil, garlic, pine nuts, and Parmesan. Pulse until finely chopped.
  3. With the food processor running, slowly add the olive oil until the pesto is smooth.
  4. Season the pesto with salt and pepper to taste.
  5. Toss the cooked linguine with the pesto until well coated.
  6. Top the pasta with the cherry tomatoes and serve.
