Zucchini and Potato Fritters

These crispy, golden fritters are a delicious way to use up summer zucchini and potatoes. Serve them with a dollop of sour cream or your favorite dipping sauce.

Ingredients

  • Vegetable oil - For frying
  • Salt and pepper - To taste
  • Flour - 1/2 cup
  • Eggs - 2
  • Potatoes - 2 medium, grated
  • Zucchini - 2 medium, grated

Instructions

  1. Place the grated zucchini and potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  2. In a large bowl, combine the zucchini, potatoes, eggs, flour, salt, and pepper.
  3. Heat the oil in a large skillet over medium heat.
  4. Drop spoonfuls of the zucchini mixture into the skillet and flatten with a spatula.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Drain on paper towels and serve warm.
