Ingredients

  • Fresh dill - For garnish
  • Smoked salmon - 8 slices
  • Sour cream - 1/2 cup
  • Vegetable oil - For frying
  • Salt and pepper - To taste
  • Flour - 2 tablespoons
  • Eggs - 2, beaten
  • Onion - 1 small, grated
  • Potatoes - 4 medium, peeled and grated

Instructions

  1. In a large bowl, combine the grated potatoes, onion, eggs, flour, salt, and pepper.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Drop spoonfuls of the potato mixture into the skillet and flatten with a spatula.
  4. Fry the latkes until they are golden brown on both sides, about 5 minutes per side.
  5. Drain the latkes on paper towels.
  6. Top each latke with a dollop of sour cream and a slice of smoked salmon.
  7. Garnish with fresh dill before serving.
