Garlic and Zucchini Fried Rice

This flavorful garlic and zucchini fried rice is a delicious and healthy twist on traditional fried rice.

Ingredients

  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Green onions - 4, sliced
  • Eggs - 2, beaten
  • Sesame oil - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Zucchini - 2 medium, diced
  • Cooked rice - 4 cups, chilled

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add minced garlic and diced zucchini to the skillet and cook until zucchini is tender, about 5 minutes.
  3. Push the zucchini to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until cooked through.
  4. Add chilled cooked rice to the skillet and stir to combine with the zucchini and eggs.
  5. Drizzle soy sauce and sesame oil over the rice mixture. Stir well to evenly coat the rice.
  6. Season with salt and pepper to taste.
  7. Continue cooking for another 5 minutes, stirring occasionally, until the rice is heated through.
  8. Remove from heat and garnish with sliced green onions.
  9. Serve hot and enjoy!
