This zucchini and mushroom stir fry is a quick and healthy dish packed with flavor.

Ingredients

  • Green onions - 2, sliced (for garnish)
  • Black pepper - To taste
  • Salt - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Mushrooms - 8 ounces, sliced
  • Zucchini - 2 medium, sliced

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the garlic, ginger, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Add the sliced zucchini and mushrooms to the skillet. Stir fry for 5-7 minutes until the vegetables are tender-crisp.
  4. Pour in the soy sauce and season with salt and black pepper. Stir fry for an additional 2 minutes.
  5. Remove from heat and garnish with sliced green onions.
