Zucchini and Squash Stir Fry

A delicious and healthy stir fry made with zucchini, squash, and a flavorful sauce.

Ingredients

  • Toasted sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, sliced (for garnish)
  • Black pepper - To taste
  • Salt - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Yellow squash - 2 medium, sliced
  • Zucchini - 2 medium, sliced

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
  3. Add the sliced zucchini and squash to the skillet, and stir fry for 5-6 minutes until they are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, honey, red pepper flakes, salt, and black pepper.
  5. Pour the sauce over the zucchini and squash, and stir fry for an additional 2 minutes until the vegetables are coated and the sauce has thickened slightly.
  6. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
  7. Serve hot as a side dish or over steamed rice.
