A delicious and healthy stir fry made with zucchini, squash, and a flavorful sauce.
Ingredients
Toasted sesame seeds - 1 tablespoon (for garnish)
Green onions - 2, sliced (for garnish)
Black pepper - To taste
Salt - To taste
Red pepper flakes - 1/2 teaspoon
Honey - 1 tablespoon
Sesame oil - 1 tablespoon
Soy sauce - 2 tablespoons
Ginger - 1 teaspoon, grated
Garlic - 2 cloves, minced
Yellow squash - 2 medium, sliced
Zucchini - 2 medium, sliced
Instructions
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
Add the sliced zucchini and squash to the skillet, and stir fry for 5-6 minutes until they are tender-crisp.
In a small bowl, whisk together the soy sauce, honey, red pepper flakes, salt, and black pepper.
Pour the sauce over the zucchini and squash, and stir fry for an additional 2 minutes until the vegetables are coated and the sauce has thickened slightly.
Remove from heat and garnish with sliced green onions and toasted sesame seeds.
