Snow Peas and Mushroom Stir Fry

A quick and healthy stir fry recipe featuring fresh snow peas and mushrooms.

Ingredients

  • Toasted sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, sliced (for garnish)
  • Black pepper - To taste
  • Salt - To taste
  • Cornstarch - 1 teaspoon
  • Vegetable broth - 1/4 cup
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Mushrooms - 8 ounces, sliced
  • Snow peas - 8 ounces

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, and stir fry for 1 minute until fragrant.
  3. Add the sliced mushrooms and cook for 2-3 minutes until they start to soften.
  4. Add the snow peas and stir fry for another 2 minutes until they turn bright green and are crisp-tender.
  5. In a small bowl, whisk together soy sauce, vegetable broth, and cornstarch until smooth.
  6. Pour the sauce mixture into the skillet and stir fry for 1-2 minutes until the sauce thickens and coats the vegetables.
  7. Season with salt and black pepper to taste.
  8. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
  9. Serve hot as a side dish or over steamed rice.
