Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1
  • Parmesan cheese - 1/4 cup, grated
  • Breadcrumbs - 1/2 cup
  • Garlic - 3 cloves, minced
  • Zucchini - 1 medium, grated
  • Ground beef - 1 pound

Instructions

  1. In a large bowl, combine the ground beef, grated zucchini, minced garlic, breadcrumbs, grated Parmesan cheese, egg, chopped parsley, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. Shape the mixture into meatballs, about 1 inch in diameter.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the meatballs to the skillet and cook until browned on all sides, about 8-10 minutes.
  5. Remove the meatballs from the skillet and set aside.
  6. In the same skillet, add the marinara sauce and bring to a simmer.
  7. Return the meatballs to the skillet and simmer for an additional 10-15 minutes, or until cooked through.
