Zucchini and Garlic White Bean Dip

This creamy and flavorful dip is made with zucchini, garlic, and white beans. It's perfect for parties or as a healthy snack.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Tahini - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • White beans - 1 can (15 oz), drained and rinsed
  • Garlic - 2 cloves, minced
  • Zucchini - 2 medium, grated

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the grated zucchini and minced garlic. Cook for 5 minutes, or until the zucchini is tender.
  3. In a food processor, combine the cooked zucchini and garlic, white beans, lemon juice, tahini, salt, black pepper, and paprika. Process until smooth and creamy.
  4. Transfer the dip to a serving bowl and drizzle with the remaining olive oil.
  5. Garnish with fresh parsley.
  6. Serve with sliced vegetables, pita chips, or crackers.
