Zimino Di Calamari

Zimino di Calamari is a traditional Italian dish, a hearty squid stew in a rich tomato sauce with spinach and potatoes.

Ingredients

  • Salt and pepper - To taste
  • Potatoes - 2, peeled and diced
  • Spinach - 200 grams, washed and chopped
  • White wine - 1/2 cup
  • Tomato paste - 2 tablespoons
  • Squid - 1 kg, cleaned and cut into rings
  • Garlic - 2 cloves, minced
  • Onion - 1, finely chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the squid and cook until it turns white, about 5 minutes.
  4. Stir in the tomato paste and white wine, scraping any browned bits from the bottom of the pot.
  5. Add the spinach and potatoes, then season with salt and pepper.
  6. Cover the pot and simmer for about 45 minutes, or until the squid is tender and the flavors are well combined.
  7. Serve the Zimino di Calamari hot, with crusty bread on the side if desired.
