Yukon Gold Potato Hash

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Salt and pepper - To taste
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Onion - 1 large, diced
  • Olive oil - 2 tablespoons
  • Yukon gold potatoes - 4 medium, diced

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the potatoes and cook until they are golden brown and crispy, about 10 minutes.
  3. Add the onion, bell pepper, and garlic to the skillet and cook until the vegetables are soft, about 5 minutes.
  4. Season the hash with salt, pepper, and paprika.
  5. Cook for another 5 minutes, stirring occasionally, until everything is well combined and heated through.
