Ingredients
Fresh parsley - 2 tablespoons, chopped
Salt and pepper - To taste
Paprika - 1 teaspoon
Olive oil - 2 tablespoons
Garlic - 2 cloves, minced
Onion - 1 small, diced
Red bell pepper - 1, diced
Potatoes - 2 medium, diced
Steelhead trout fillets - 2 fillets
Instructions
Preheat the oven to 400°F.
Season the steelhead trout fillets with salt, pepper, and paprika.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the trout fillets for 3-4 minutes on each side, until cooked through. Remove from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil. Add the diced potatoes, red bell pepper, onion, and minced garlic. Cook until the potatoes are golden and crispy, about 10-12 minutes.
Season the potato hash with salt, pepper, and paprika. Stir in the chopped parsley.
Serve the steelhead trout fillets on top of the potato hash.
