Watermelon Gazpacho

This refreshing watermelon gazpacho is a perfect summer soup, made with fresh watermelon, tomatoes, cucumbers, and herbs.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh basil - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Red bell pepper - 1/2, diced
  • Cucumber - 1 medium, peeled and diced
  • Tomatoes - 2 medium, diced
  • Watermelon - 4 cups, diced

Instructions

  1. In a blender or food processor, combine the watermelon, tomatoes, cucumber, red bell pepper, red onion, basil, mint, lime juice, olive oil, salt, and pepper.
  2. Blend until smooth and well combined.
  3. Taste and adjust the seasoning if needed.
  4. Chill in the refrigerator for at least 1 hour before serving.
  5. Serve chilled and garnish with additional fresh herbs if desired.
