Watermelon and Cucumber Gazpacho

This refreshing gazpacho is made with juicy watermelon, crisp cucumber, and tangy lime juice.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Extra virgin olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh mint leaves - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Cucumber - 1 large, peeled and diced
  • Watermelon - 4 cups, diced

Instructions

  1. In a blender, combine the watermelon, cucumber, red onion, mint leaves, lime juice, olive oil, salt, and black pepper.
  2. Blend until smooth and well combined.
  3. Taste and adjust the seasoning if needed.
  4. Chill in the refrigerator for at least 1 hour before serving.
  5. Serve chilled and garnish with additional mint leaves, if desired.
