Seafood Gazpacho

A refreshing and tangy cold soup packed with fresh seafood, vegetables, and a hint of spice.

Ingredients

  • Salt and pepper - To taste
  • Hot sauce - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lime juice - 1/4 cup
  • Crab meat - 1 cup, cooked and chopped
  • Shrimp - 1 cup, cooked and chopped
  • Garlic - 2 cloves, minced
  • Red onion - 1/2, diced
  • Red bell pepper - 1, diced
  • Cucumber - 1, peeled and diced
  • Tomatoes - 4 large, diced

Instructions

  1. In a large bowl, combine the tomatoes, cucumber, bell pepper, onion, and garlic.
  2. Add the shrimp and crab meat to the bowl.
  3. In a small bowl, whisk together the lime juice, olive oil, hot sauce, salt, and pepper.
  4. Pour the dressing over the seafood and vegetables and stir to combine.
  5. Cover the bowl and refrigerate for at least 2 hours before serving.
  6. Serve the gazpacho cold, garnished with fresh herbs if desired.
