Wasabi Ahi Tuna Poke Bowl

This refreshing and flavorful poke bowl features fresh ahi tuna marinated in a wasabi-infused sauce, served over a bed of rice and topped with a variety of delicious toppings.

Ingredients

  • Cooked rice - 2 cups, for serving
  • Sesame seeds - 1 tablespoon
  • Seaweed salad - 1/2 cup
  • Green onions - 2, sliced
  • Edamame - 1/2 cup, steamed
  • Carrot - 1, julienned
  • Cucumber - 1/2, sliced
  • Avocado - 1, sliced
  • Wasabi paste - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ahi tuna - 8 ounces, sushi-grade, cubed

Instructions

  1. In a bowl, combine soy sauce, rice vinegar, sesame oil, and wasabi paste to make the marinade.
  2. Add the cubed ahi tuna to the marinade and gently toss to coat. Let it marinate in the refrigerator for at least 15 minutes.
  3. Prepare the toppings by slicing the avocado, cucumber, and green onions. Julienne the carrot and steam the edamame.
  4. To assemble the poke bowl, start with a bed of cooked rice in a bowl.
  5. Top the rice with the marinated ahi tuna.
  6. Arrange the avocado, cucumber, carrot, edamame, and seaweed salad around the tuna.
  7. Sprinkle sesame seeds and sliced green onions over the bowl.
  8. Serve the poke bowl chilled and enjoy!
