Tuna Poke Bowl

This refreshing and healthy tuna poke bowl is made with fresh tuna, rice, and a variety of colorful vegetables.

Ingredients

  • Sesame seeds - 1 tablespoon
  • Cooked rice - 2 cups
  • Seaweed salad - 1/2 cup
  • Edamame - 1/2 cup, shelled
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Avocado - 1, sliced
  • Green onions - 2, thinly sliced
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sushi - grade tuna - 8 ounces, cubed

Instructions

  1. In a bowl, combine the soy sauce, rice vinegar, and sesame oil.
  2. Add the cubed tuna to the bowl and gently toss to coat. Let it marinate for 10 minutes.
  3. In a serving bowl, place a layer of cooked rice.
  4. Arrange the marinated tuna, sliced avocado, cucumber, carrot, edamame, and seaweed salad on top of the rice.
  5. Sprinkle with sliced green onions and sesame seeds.
  6. Serve the tuna poke bowl immediately and enjoy!
