Vietnamese Grilled Shrimp Skewers

These Vietnamese Grilled Shrimp Skewers are marinated in a tangy sauce and then grilled to perfection. They are perfect for a summer barbecue or a quick weeknight dinner.

Ingredients

  • Wooden skewers - 8, soaked in water for 30 minutes
  • Red pepper flakes - 1/4 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Lemongrass - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. In a bowl, combine the garlic, lemongrass, fish sauce, sugar, black pepper, and red pepper flakes.
  2. Add the shrimp and toss to coat. Marinate in the refrigerator for at least 15 minutes, or up to 1 hour.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Thread the shrimp onto the soaked skewers.
  5. Grill the shrimp for 2-3 minutes on each side, or until they are pink and opaque.
  6. Serve the shrimp skewers hot, with a side of rice and a squeeze of fresh lime juice if desired.
