Veggie Tostadas

These delicious veggie tostadas are packed with fresh vegetables and topped with a flavorful avocado sauce.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Avocado - 1, mashed
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/2, thinly sliced
  • Bell peppers - 2, thinly sliced
  • Black beans - 1 can, drained and rinsed
  • Corn tortillas - 8

Instructions

  1. Preheat the oven to 400°F.
  2. Brush the corn tortillas with olive oil and place them on a baking sheet.
  3. Bake for 8-10 minutes, or until crispy.
  4. In a bowl, combine the mashed avocado, lime juice, cilantro, salt, and pepper to make the avocado sauce.
  5. In a skillet, heat olive oil over medium heat.
  6. Add the bell peppers and red onion, and cook until they are tender, about 5 minutes.
  7. Add the black beans and cherry tomatoes to the skillet, and cook for an additional 2-3 minutes.
  8. To assemble the tostadas, spread a layer of the avocado sauce on each crispy tortilla.
  9. Top with the cooked vegetables and garnish with additional cilantro, if desired.
  10. Serve immediately and enjoy!
