Ingredients

  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Corn - 1 cup, cooked
  • Red onion - 1/2, sliced
  • Bell peppers - 2, sliced
  • Black beans - 1 can, drained and rinsed
  • Brown rice - 1 cup, cooked

Instructions

  1. Preheat the oven to 400°F.
  2. Place the sliced bell peppers and red onion on a baking sheet. Drizzle with olive oil, sprinkle with cumin, paprika, salt, and pepper. Toss to coat.
  3. Roast in the oven for 20-25 minutes, or until the vegetables are tender and slightly charred.
  4. In a bowl, combine the cooked brown rice, black beans, roasted vegetables, corn, cherry tomatoes, avocado, and cilantro.
  5. Drizzle with lime juice and season with salt and pepper. Toss to combine.
  6. Serve the veggie burrito bowl as is or with your favorite toppings such as salsa, sour cream, or shredded cheese.
