Veggie Tacos

These delicious veggie tacos are filled with a variety of colorful vegetables and topped with a flavorful sauce.

Ingredients

  • Hot sauce - To taste
  • Sour cream - 1/2 cup
  • Salt and pepper - To taste
  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Corn kernels - 1 cup, cooked
  • Black beans - 1 cup, cooked
  • Red onion - 1/2, thinly sliced
  • Zucchini - 1, sliced
  • Bell peppers - 2, thinly sliced
  • Corn tortillas - 8

Instructions

  1. Heat a drizzle of oil in a large skillet over medium heat.
  2. Add the bell peppers, zucchini, and red onion. Cook until the vegetables are tender, about 5-7 minutes.
  3. Add the black beans and corn kernels to the skillet. Season with salt and pepper. Cook for another 2-3 minutes.
  4. In a small bowl, combine the sour cream, lime juice, and chopped cilantro. Stir well.
  5. Warm the corn tortillas in a dry skillet or microwave.
  6. To assemble the tacos, spread a spoonful of the sour cream mixture onto each tortilla.
  7. Top with the cooked vegetables, sliced avocado, and a drizzle of hot sauce.
  8. Serve the veggie tacos warm and enjoy!
