Veggie Shawarma

This delicious veggie shawarma is packed with flavorful marinated vegetables and served with a creamy tahini sauce.

Ingredients

  • Tahini sauce - 1/2 cup
  • Pita bread - 4
  • Salt and pepper - To taste
  • Ground turmeric - 1/2 teaspoon
  • Ground paprika - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 1 cup
  • Red onion - 1, sliced
  • Bell peppers - 2, sliced
  • Zucchini - 2, sliced

Instructions

  1. In a large bowl, combine the sliced zucchini, bell peppers, red onion, cherry tomatoes, minced garlic, olive oil, lemon juice, ground cumin, ground paprika, ground turmeric, salt, and pepper. Mix well to coat the vegetables in the marinade.
  2. Cover the bowl and let the vegetables marinate for at least 20 minutes, or refrigerate overnight for maximum flavor.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Grill the marinated vegetables for about 10 minutes, or until they are tender and slightly charred.
  5. While the vegetables are grilling, warm the pita bread in a toaster or oven.
  6. Once the vegetables are cooked, remove them from the grill and assemble the veggie shawarma by placing a generous amount of grilled vegetables on each warmed pita bread.
  7. Drizzle the tahini sauce over the vegetables.
  8. Fold the pita bread in half and serve the veggie shawarma immediately.
