Veggie and Quinoa Bowls

These veggie and quinoa bowls are packed with nutritious ingredients and bursting with flavor.

Ingredients

  • Sesame seeds - 1 tablespoon
  • Avocado - 1, sliced
  • Salt and pepper - To taste
  • Lemon juice - 2 tablespoons
  • Spinach - 2 cups
  • Cherry tomatoes - 1 cup
  • Red onion - 1, sliced
  • Zucchini - 1, sliced
  • Bell peppers - 2, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups
  • Quinoa - 1 cup

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the bell peppers, zucchini, and red onion to the skillet. Cook for 5-7 minutes until the vegetables are tender-crisp.
  4. Add the cherry tomatoes and spinach to the skillet. Cook for an additional 2 minutes until the spinach wilts.
  5. Stir in the cooked quinoa and lemon juice. Season with salt and pepper to taste.
  6. Divide the veggie and quinoa mixture into bowls. Top with sliced avocado and sprinkle with sesame seeds.
  7. Serve hot and enjoy!
