This refreshing and colorful salad is a vegetarian twist on the classic Nicoise salad, featuring fresh vegetables, boiled eggs, and a tangy vinaigrette dressing.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 1/4 cup
  • Red wine vinegar - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Fresh basil - 1/4 cup, chopped
  • Capers - 2 tablespoons
  • Kalamata olives - 1/2 cup
  • Boiled eggs - 2, sliced
  • Green beans - 1 cup, blanched
  • Red bell pepper - 1, sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed salad greens - 4 cups

Instructions

  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red bell pepper, green beans, boiled eggs, Kalamata olives, capers, and fresh basil.
  2. In a small bowl, whisk together the Dijon mustard, red wine vinegar, extra virgin olive oil, salt, and pepper to make the vinaigrette dressing.
  3. Drizzle the dressing over the salad and toss gently to coat.
