Nicoise Salad

Nicoise Salad

A classic French salad made with fresh vegetables, tuna, eggs, and olives.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 1/4 cup
  • Red wine vinegar - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Fresh basil - 1/4 cup, chopped
  • Anchovy fillets - 4, optional
  • Kalamata olives - 1/2 cup
  • Red onion - 1/4 cup, thinly sliced
  • Green beans - 1 cup, blanched
  • Cherry tomatoes - 1 cup, halved
  • Hard - boiled eggs - 4, sliced
  • Canned tuna - 1 can, drained
  • Mixed salad greens - 4 cups

Instructions

  1. In a large salad bowl, arrange the mixed salad greens as the base.
  2. Top the greens with the canned tuna, sliced hard-boiled eggs, cherry tomatoes, blanched green beans, red onion, Kalamata olives, and anchovy fillets (if using).
  3. In a small bowl, whisk together the Dijon mustard, red wine vinegar, extra virgin olive oil, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the salad.
  5. Garnish with fresh basil.
  6. Toss the salad gently to combine all the ingredients.
  7. Serve immediately and enjoy!
