This spicy veggie and quinoa bowl is packed with flavor and nutritious ingredients.
Ingredients
Fresh cilantro - 1/4 cup, chopped
Lime - 1, juiced
Avocado - 1, sliced
Salt and pepper - To taste
Paprika - 1/2 teaspoon
Cumin - 1 teaspoon
Chili powder - 1 teaspoon
Garlic - 3 cloves, minced
Red onion - 1, sliced
Zucchini - 1, sliced
Bell peppers - 2, sliced
Vegetable broth - 2 cups
Quinoa - 1 cup
Instructions
Rinse the quinoa under cold water.
In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
In a large skillet, heat some olive oil over medium heat. Add the bell peppers, zucchini, red onion, and minced garlic. Cook until the vegetables are tender, about 5-7 minutes.
Add the cooked quinoa to the skillet with the vegetables. Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld together.
Remove from heat and squeeze the lime juice over the quinoa and vegetables. Toss to combine.
Divide the spicy veggie and quinoa mixture into bowls. Top with sliced avocado and fresh cilantro.
