Veggie and Goat Cheese Tart

This delicious veggie and goat cheese tart is made with a flaky pastry crust, fresh vegetables, and creamy goat cheese.

Ingredients

  • Salt and pepper - To taste
  • Fresh thyme - 1 tablespoon, chopped
  • Olive oil - 2 tablespoons
  • Red onion - 1, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Yellow squash - 1, thinly sliced
  • Zucchini - 1, thinly sliced
  • Goat cheese - 4 oz
  • Puff pastry - 1 sheet, thawed

Instructions

  1. Preheat the oven to 400°F.
  2. Roll out the puff pastry sheet on a lightly floured surface and transfer it to a baking sheet.
  3. Spread the goat cheese evenly over the puff pastry.
  4. Arrange the sliced zucchini, yellow squash, red bell pepper, and red onion on top of the goat cheese.
  5. Drizzle the olive oil over the vegetables and sprinkle with fresh thyme, salt, and pepper.
  6. Bake for 25-30 minutes, or until the pastry is golden brown and the vegetables are tender.
  7. Remove from the oven and let cool for a few minutes before serving.
  8. Slice into squares or wedges and serve warm.
