Udon Noodle Stir Fry

This delicious udon noodle stir fry is packed with vegetables and tossed in a savory sauce.

Ingredients

  • Sesame seeds - 1 tablespoon
  • Green onions - 2, sliced
  • Sesame oil - 1 tablespoon
  • Oyster sauce - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Broccoli florets - 1 cup
  • Bell pepper - 1, thinly sliced
  • Carrots - 1 large, julienned
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Udon noodles - 8 ounces

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium heat.
  3. Add minced garlic and grated ginger to the skillet and sauté for 1 minute.
  4. Add julienned carrots, sliced bell pepper, and broccoli florets to the skillet. Stir fry for 3-4 minutes, until the vegetables are tender-crisp.
  5. In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil.
  6. Add the cooked udon noodles to the skillet and pour the sauce over them. Toss everything together to coat the noodles and vegetables evenly.
  7. Continue cooking for 2-3 minutes, until the noodles are heated through.
  8. Garnish with sliced green onions and sesame seeds before serving.
