This delicious stir fry combines thick udon noodles with a variety of colorful vegetables, creating a flavorful and satisfying dish.

Ingredients

  • Green onions - 2, sliced, for garnish
  • Sesame seeds - 1 tablespoon, for garnish
  • Sesame oil - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Snap peas - 1 cup
  • Broccoli florets - 1 cup
  • Bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Udon noodles - 8 oz

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add minced garlic and grated ginger to the pan and sauté for 1-2 minutes until fragrant.
  4. Add julienned carrot, sliced bell pepper, broccoli florets, and snap peas to the pan. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  5. Add the cooked udon noodles to the pan and toss to combine with the vegetables.
  6. Pour soy sauce and sesame oil over the noodles and vegetables. Stir fry for an additional 2-3 minutes until everything is well coated and heated through.
  7. Remove from heat and garnish with sesame seeds and sliced green onions.
