Turkey Meatballs with Zoodles

This is a healthy, low-carb dish featuring turkey meatballs served over zucchini noodles, also known as 'zoodles'.

Ingredients

  • Parmesan cheese - 1/2 cup, grated
  • Marinara sauce - 2 cups
  • Zucchini - 4, spiralized
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Italian seasoning - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Egg - 1
  • Ground turkey - 1 pound

Instructions

  1. In a large bowl, combine the ground turkey, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes.
  4. Add the marinara sauce to the skillet and simmer until the meatballs are cooked through, about 10 minutes.
  5. While the meatballs are cooking, spiralize the zucchini into noodles.
  6. Serve the meatballs and sauce over the zucchini noodles, topped with the grated Parmesan cheese.
