Skillet Turkey and Spinach Meatballs

These skillet turkey and spinach meatballs are a healthy and delicious main course. They're packed with flavor and are perfect for a weeknight dinner.

Ingredients

  • Marinara sauce - 2 cups
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Parmesan cheese - 1/2 cup, grated
  • Breadcrumbs - 1/2 cup
  • Egg - 1
  • Garlic - 2 cloves, minced
  • Spinach - 2 cups, chopped
  • Ground turkey - 1 pound

Instructions

  1. In a large bowl, combine the ground turkey, spinach, garlic, egg, breadcrumbs, Parmesan cheese, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes.
  4. Add the marinara sauce to the skillet and bring to a simmer. Cover and cook for another 10-15 minutes, until the meatballs are cooked through.
  5. Serve the meatballs with extra Parmesan cheese on top, if desired.
