Turkey and Avocado Eggs Benedict

A healthy twist on a classic breakfast dish, featuring lean turkey, creamy avocado, and perfectly poached eggs.

Ingredients

  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Hollandaise sauce - 1 cup
  • Eggs - 4, poached
  • Avocado - 2, sliced
  • Turkey breast - 8 slices
  • English muffins - 4, split and toasted

Instructions

  1. Toast the English muffins until they are golden brown.
  2. Place two slices of turkey on each muffin half.
  3. Top the turkey with a few slices of avocado.
  4. Poach the eggs and place one on top of the avocado on each muffin half.
  5. Drizzle the Hollandaise sauce over the eggs.
  6. Sprinkle with paprika, salt, and pepper.
  7. Serve immediately.
