Avocado Eggs Benedict

A healthy twist on the classic eggs benedict, featuring ripe avocados and a creamy hollandaise sauce.

Ingredients

  • Salt and pepper - To taste
  • Paprika - 1/4 teaspoon
  • Hollandaise sauce - 1 cup
  • Canadian bacon - 4 slices, cooked
  • Eggs - 4, poached
  • Avocados - 2, ripe and sliced
  • English muffins - 4, split and toasted

Instructions

  1. Toast the English muffins and set aside.
  2. Cook the Canadian bacon in a skillet over medium heat until browned.
  3. Poach the eggs in a pot of simmering water until the whites are set but the yolks are still runny.
  4. Assemble the eggs benedict by placing a slice of Canadian bacon on each muffin half, followed by a few slices of avocado, a poached egg, and a generous drizzle of hollandaise sauce.
  5. Sprinkle with paprika, salt, and pepper before serving.
