Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Kalamata olives - 1/4 cup, pitted and halved
  • Cucumber - 1/2 cup, diced
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Canned white beans - 1 can (15 oz), drained and rinsed
  • Canned tuna - 1 can (5 oz), drained

Instructions

  1. In a large bowl, combine the drained tuna, white beans, red onion, cherry tomatoes, cucumber, Kalamata olives, and fresh parsley.
  2. In a small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper.
