This refreshing salad combines crisp endive leaves with flavorful tuna and a tangy vinaigrette dressing.

Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Kalamata olives - 1/4 cup, pitted and sliced
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Canned tuna - 1 can, drained
  • Endive - 2 heads, separated into leaves

Instructions

  1. In a large bowl, combine the endive leaves, tuna, cherry tomatoes, red onion, Kalamata olives, feta cheese, and fresh parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the vinaigrette dressing.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
