Tostadas de Camarones

Tostadas de camarones are crispy tortillas topped with seasoned shrimp, fresh vegetables, and a zesty salsa.

Ingredients

  • Salsa - 1/2 cup
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Tomato - 1, diced
  • Lettuce - 1 cup, shredded
  • Refried beans - 1 cup
  • Corn tortillas - 8
  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. In a bowl, combine the shrimp, lime juice, garlic powder, cumin, salt, and black pepper. Let marinate for 10 minutes.
  2. Heat the vegetable oil in a skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes per side, until pink and cooked through.
  3. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, heat the corn tortillas for about 1 minute on each side, until crispy.
  5. Spread a layer of refried beans on each crispy tortilla.
  6. Top with shredded lettuce, diced tomato, sliced avocado, cooked shrimp, cilantro, and salsa.
  7. Serve immediately and enjoy!
